Quinoa Slaw for Spring: Simple. Easy.

Here is a lovely, fresh dish for the weekend. A light quinoa salad, if you will. But it's also a stir-fry. With slaw mix. A veritable hybrid of a recipe. We tossed it together this week for an easy supper with warmed buttered tortillas on the side.

Simple Quinoa Slaw for Spring


We ate this fast, tasty, nourishing dish warm. But you could also make it ahead of time and chill it. When I stir-fry the slaw mix it, is over medium heat, and brief. Just to soften, yet keep the crunch. Warming the quinoa, cabbage and seasoning helps mingle the flavors. To keep it vegan, omit the cheese or use your favorite vegan alternative to dairy.

Ingredients:


2 cups cooked quinoa (We cooked ours in low sodium chicken broth for a flavor boost.)
2-3 tablespoons olive oil
2 heaping cups of white and purple cabbage slaw with carrot 
1 tablespoon dried cranberries or golden raisins
2 tablespoons good balsamic vinegar
A drizzle of raw honey, to taste
A sprinkle of snipped chives
Black pepper, to taste
A handful of yellow grape or cherry tomatoes, halved

A sprinkle of Greek feta, or crumbled goat cheese for serving.

Instructions:


While the quinoa is cooking (here's how I cook mine, in a rice cooker), warm up a large skillet over medium heat. Add the olive oil. Add the slaw with carrot, the cranberries or golden raisins. Toss and stir a bit to warm through- no more than two minutes.

Keeping the slaw slightly crunchy, add in the cooked quinoa and combine with a spoon. Remove the pan from heat. Season with the balsamic vinegar and honey, chives, and black pepper. Stir to combine.

Add in the tomatoes and feta cheese. Toss lightly.

Lovely with warm buttered tortillas, or a wedge of Sweet Potato Cornbread.

Makes 4 servings.

Notes:

To keep it strictly vegan, you know the drill: use light veggie broth, agave instead of honey, and vegan cheese.

If you decide to chill it, the cabbage slaw will soften and lose it's crispness.

For us this quinoa dish was the perfect light supper. For others it might be better as a side dish. Either way- it's easy and fast and delicious.
